Cooking Inspiration (Spinach & Meatball Soup)

My spinach meatball soup turned out to be a hit with Jordan. On an attempt to stay on the healthy side I try to make dishes that he enjoys with a twist on ingredients. For example I use turkey instead of beef for burgers, turkey pepperoni for homemade pizza, home made vinegar and oil dressings. Today I wanted something that has not been part out dinner menu before. While I have made meatball soups in the past, non were as enjoyed as the one I made tonight. I will post recipe shortly.

Meatball Ingredients:
1lb of turkey meat
1 egg
1/2 cup of bread crumbs
1/2 cup of grated Parmesan cheese
1 tablespoon of oregano
Half of an onion finely diced
1 tablespoon pepper
tsp of salt

Mix all ingredients together well to form meatballs.

For soup:
4 cups of organic lightly salted chicken broth
2 cups of water
1 tablespoon of pepper
Finely diced half and onion
Tablespoon of pepper
Three garlic cloves
Bag of Spinach
1/2 a cup mushroom halves

Boil Chicken broth, pepper, onions, salt for ten minutes. Then you will add the meatballs, and mushrooms and cook for another 15minutes. Last you add the spinach to cook for another 5 to 7 mins. Meatballs should then be cooked thoroughly, and this delicious soup will be ready to serve. I hope you enjoy this soup as much as my little family did.
